Oh, fall. You are so perfect.
I love everything that comes along with you. The cozy socks, the cinnamon, the baked goods, the best apples, and comforting stews + soups.
In my opinion this recipe is a gem . A crowd pleaser in my home as well as being perfect for leftovers + freezer meals turned quick dinners. All very important attributes of a good meal in my book.
And while it requires some time chopping, I suggest finding a day where you can take some time to enjoy the cooking experience, instead of rushing through another recipe. Infuse some love in there. Play some music or a podcast. Light a candle. Gather a friend or family member and catch up on the day. Have fun making this chili and then enjoying it around the table. And save some for the next day or freeze for a future speedy meal.
My Favorite Veggie Chili
3 tablespoons olive oil or butter (I use butter)
1 onion, diced
4 cloves garlic, minced
1 red bell pepper, seeded + diced
1 green bell pepper, seeded + diced
2 whole carrots, diced
1/2 jalapeño, seeded + finely diced
1 cup mushrooms, finely diced
1 teaspoon salt
1 teaspoon Mexican spice or organic taco seasoning
1 tablespoon ground cumin
3 cups chicken or veggie stock
1 organic corn tortilla
1 can (14 oz) tomato sauce
1 can(14 oz) fire roasted diced tomatoes
1 can kidney beans, drained + rinsed
1 can pinto beans, drained + rinsed
1 can black beans, drained + rinsed
3/4 cup organic fresh or frozen corn kernels
fresh cilantro, chopped
shredded romaine lettuce
Heat oil or butter over medium in a large stock pot. Once melted, add the diced onions and salute until softened, about 6 minutes. Add the garlic, bell peppers, carrots, jalapeño, and mushrooms and cook until the vegetables begin to brown, about 8-10 minutes. Then goes the Mexican spice, cumin, and sea salt. Give the mixture a good stir and add in the vegetable stock, corn tortilla, tomato paste, fire roasted diced tomatoes, all of the beans, and the corn. Let the chili simmer and reduce for 30minutes to an hour with the lid on but ajar. You will be left with an unbelievably delicious, hearty, and nutritious one pot meal. Serve warm with optional condiments and enjoy!
