We've all been there. Pants unbuttoned, in a food coma on your relative's couch. (Take me home already!) The holidays bring so much fun and festivity, and also the delicious once yearly foods that we often tend to enjoy too much.
I actually dislike that term, 'enjoy too much.' Because when you overeat and feel the bloat, discomfort, and the guilt of overindulging.... well, that's not exactly what I call enjoying.
My secret to enjoying everything you want but not overdoing it and feeling ill? Well, 2 secrets actually. First is your focus. If your focus is only food during holiday dinners and parties, you will surely overeat. If you are preoccupied solely by counting calories or how this is the one day you will get to eat stuffing or how you wish you could have a slice of bread, but shouldn't... you will most likely not enjoy yourself to the fullest and overeat. So set other focuses. Yes, holiday food is fantastic but should be an element that elevates your day, not the only focus of the season. Have a wonderful conversation with your friend or relative you don't regularly get quality time with, decorate your home and table using your personal creativity, pick out something cozy and fun to wear, take photos, play games.
In other words, fill yourself up with life and not just food.
Okay, second secret. I may loose some of you for sounding new agey but I'll take my chances because this shit works. Visualize. Before the night of Thanksgiving or friendsgiving or your holiday party, let your mind daydream and visualize how you want the party to look like and most importantly how you want to feel. Maybe you see yourself relaxed and laughing in the corner enjoying your bestie and tealights in the background. Maybe you see yourself at the dinner table enjoying each bite and stopping when you've had enough. Whatever your idea of the perfect evening may be, envision it in your mind before bed so you subconsciously ruminate in these cozy feelings throughout the night and set the tone and intention for how you want to act and feel. I'm telling you, this works people!
Lastly, please enjoy. Enjoy each bite you take, chewing slowly and loving the flavor and care in which it was made. Enjoy what you do have with your friends and family and health and let the rest go. Have fun cooking and creating in the kitchen, bringing tradition and the novelty of the holidays to life.
And yes, I promised you a recipe. It is not gluten free or made with wholesome flours, but this bread recipe is something that is so easy, simple, and satisfying to make and eat. I believe the holidays are a time to enjoy, so of course listen to your body but also enjoy your favorite foods. Enjoy the smell of fresh bread baking in your home and of course enjoy the impressiveness of making homemade bread!
Homemade No Knead Bread
3 cups all purpose flour
1/2 teaspoon instant yeast
2 teaspoons fine sea salt
1.5 cups room temperature water
In a ceramic or wooden bowl mix together the flour, yeast, sea salt, and water the night before baking. Stir mixture together well, but so it still looks a bit shaggy. Cover with a cloth and let sit in a warm spot overnight or for 12-15 hours.
In the morning place a large, round dutch oven with the lid on in your oven and preheat to 450 degrees. This will most likely take around 20-30 minutes.
Place your dough on a sheet of parchment paper and sprinkle with sea salt. When your pot is hot and the oven preheated, take it out and lift the dough + parchment inside the dutch oven. Place the top on and bake for 30 minutes. Then, remove the lid and bake the loaf for 10-15 minutes further to allow the crust to develop and get crunchy. Thats it! Delicious, simple, and impressive homemade bread.
